5 Easy Snack Recipes for Unexpected Guests

So you’re friends are dropping by for an impromptu get together and you don’t have that much time to whip up your usual array of appetizers, but you still want to serve something yummy – something to your standards of course.

Well, try out the following, supremely easy and supremely delicious recipes, which you may just throw into your normal repertoire.

Colorful Caprese Bites
Serves: 4
Prep Time: 5 mins.

8 cherry tomatoes, halved
4 small Mozzarella balls, halved
4 fresh basil leaves, sliced
3 tbsp balsamic vinegar
¼ cup extra virgin olive oil
½ tsp salt
½ tsp black pepper
16 toothpicks


  1. Combine balsamic vinegar, olive oil, salt, black pepper and basil leaves, set aside.
  2. Skewer half a tomato, half cheese ball and the second half of the tomato on a toothpick like a sandwich, drizzle with dressing and serve.


Lemony Hummus
Serves: 4
Prep Time: 5 mins.


2 cups cooked chick peas
1 lemon, juiced
1 tsp tahini
1 tbsp extra virgin olive oil
½ tsp salt
½ tsp black pepper
2 pita breads


  1. Combine ingredients in food processor and mix until fairly smooth.
  2. Slice pita breads into triangles and serve with hummus.


Mushroom Cream Cheese Bites
Serves: 4
Prep Time: 10 mins.



16 Crimini mushrooms, stemmed

½ cup cream cheese

2 tsp chopped dill

4 cloves garlic, peeled

½ tsp salt

Extra virgin olive oil


  1. Preheat oven to 400 degrees and lightly coat a baking tray with extra virgin olive oil.
  2. Place cream cheese, dill, garlic, salt, and 2 tbsp extra virgin olive oil in blender, mix until smooth.
  3. Place mushrooms on baking tray, fill each mushroom with the cream cheese mixture stick into the oven and bake for 12 minutes.


The BLT Dip
Serves: 4
Prep Time: 5 mins.



¼ cup bacon, crumbled

1 green onion, chopped

½ cup low-fat cream cheese

1/4 cup low-fat sour cream

1 cup chopped lettuce

1 medium tomato, diced

Choice of crackers or bread for dipping


  1. Combine bacon, green onion, cream cheese in food processor and mix until smooth.
  2. Place dip in serving bowl, top with lettuce and tomato.
  3. Serve with choice of crackers or good bread


Apple Pie Smoothie
Serves: 4
Prep Time: 10 mins.



2 apples, peeled, cored, sliced

1 cup Greek yogurt

2-1/2 cups ice

½ tsp cinnamon

½ tsp nutmeg

4 tsp brown sugar.



  1. Place ingredients in blender and mix until smooth.
